Bruce was born in Texas to a family of food lovers and restaurateurs. After an exceedingly short career in music, he took up the family business of cooking in Texas and eventually California, where he worked for seven years as the sous chef to Executive Chef Eric Tucker at the world famous Millennium Restaurant and was co-author of their second cookbook, The Artful Vegan (Ten speed Press, 2003). After travelling to France and Italy to work on organic farms, Bruce settled in Kemptville,Ontario in 2006. With his wife, Ottawa native Nicole LeBlanc, he opened the Branch Restaurant and Texas Grill, which they owned and operated until 2016. The Branch specialized in organic and local foods and served a signature traditional Central Texas style 100% hardwood smoked beef brisket. Bruce was on the first advisory committee for Savour Ottawa, helped found The Kemptville Kinsmen Farmers’ Market and Sustainable North Grenville and is an outspoken advocate for local foods.
